This is one of my favorite recipes my Italian Zia Cici has even given me. It's an orange olive oil yogurt cake and it's so refreshing, light and delicate. Perfect topped with fresh whipped cream or a scoop of vanilla ice cream.
1 (150g) vanilla yogurt container. This will be your measuring tool.
2 yogurt containers of sugar
1 container of olive oil
3 containers of flour
Zest of 2 oranges
1 packet of Paneangeli yeast (find on Amazon or Italian store)
Mix everything in a bowl and place on spring pan. Bake for 40 minutes at 180c/365farenheit.
For glaze take the juice of two oranges and bring to a boil. Add a teaspoon of sugar to make a simple syrup glaze. When cake is cool, take a toothpick and make small holes in cake. Pour glaze over it.
